Organic Dairy Cow Frequently Asked Questions:

What is Organic Dairy Beef?

It’s beef from certified organic, pasture-raised retired dairy cows that have spent years grazing lush pastures while producing milk. The result is richly flavored, beautifully marbled meat with golden, vitamin-rich fat.

Why choose Organic Dairy Beef?

It’s local, certified organic, regeneratively raised, and supports a respectful, waste-free food system that honors every stage of a cow’s life.

How is it different from your grass-fed beef?

Our 100% grass-fed beef comes from younger cattle raised solely for beef. Organic Dairy Beef comes from older dairy cows that have also been raised regeneratively, but with supplemental organic grain to match their needs during milk production.

Why is the meat darker in color?

Older cows develop deeper muscle pigmentation from years of grazing and movement. This results in a rich ruby-red color and complex flavor.

Why is the fat yellow?

The golden hue comes from high levels of beta-carotene found in the lush organic forages these cows eat. It’s also a sign of vitamin-rich, healthy fat.

Is it tough because the cows are older?

No, when properly aged and prepared, Organic Dairy Beef is tender, juicy, and full of flavor. Many European chefs prefer it for its depth and complexity.

Where does it come from?

Our beef comes from Forest Glen Oaks Dairy, just miles from our own herd, raised by the Kircher Family, who are trusted friends that share our values.

Is it organic?

Yes. The cows are certified organic and pasture-based, with supplemental organic feed, and raised to the highest animal welfare standards.

Why haven’t I seen this in stores before?

In Europe, ex-dairy cow beef is a celebrated culinary tradition, but in the U.S. it’s often undervalued. We’re bringing it forward here because it deserves recognition.

How should I cook it?

Organic Dairy Beef shines as multiple cuts - anything that benefits from rich marbling and deep flavor. Ask the staff for recommended cooking tips!
